Girly birthday!

So I have had a few couples ask me "What if something happens to the cake or it falls?" and my answer was always, after knocking on wood, "I'm really not sure what I would do, as it has never happened."

Well - IT HAPPENED.  I was delivering once cake and as I opened the back of the van to deliver the first one, I could see that this cake had completely collapsed and was nowhere near fixable.  My heart lost a few beats and I felt like crying.  But I didn't.  I took a deep breath, I calmly delivered the other cake and then proceeded to make arrangements for my afternoon.   I had to arrange care for my children, I had to call the bride groom on their wedding day, to let them know what happened but to also reassure them NOT to stress and let them know they would have a cake for their wedding reception.

I started at 2pm, baking, as fast as I have ever baked before, and delivered the new remake at 5:45pm.  I was shaky yet relieved.  My husband asked me why I take a whole day to make a wedding cake when I can make it in 3 hours.  It makes sense, but I never want to rush my work, as I simply enjoy the whole process, just not under so much pressure.  Whew!
